Stunning! Really nice! My only suggestion is a modesty panel. I am in the process of making 2 desks and both will have modesty panels. I am also a big fan of hidden compartments in things like desks. Under and behind drawers usually.
It's called Outdoor Defense Oil; it's a blend of Tung Oil, Pine Oil and Zinc. When I first started woodworking, I would use poly, but Mother Nature is relentless and she will eventually win. Yes, the pedestals can separate; I used DF500 connectors for the center stretcher.
